Cucumber spread sandwiches are so easy to make (and fun too). They are a yummy addition to party food or a great little afternoon snack after the pool.
You only need a few ingredients…
2 Cucumbers, Mostly Peeled, Finely Chopped, 2 TBSP Finely Chopped Onion, 1 TSP Garlic, 1 Package Cream Cheese (8 oz), Softened, Salt to Taste
After you finely chop the cucumber (food processor recommended), be sure it is drained before adding it to the rest of the ingredients. you can pat it with a paper towel to get remaining moisture out.
Mix all of the ingredients until well blended then chill in the refrigerator. While the spread is chilling to a spreadable consistency, cut your bread into fun shapes. I used one of my old Tupperware cutters that has a matching little cutter.
When the spread is chilled, put a little on each bread cutout. I topped with the smaller matching cutout, placed on a plate and embellished with red peppers.
If you have extra spread, you can add sour cream to it to make a yummy dip that goes great with veggie sticks or bagel crackers.
