We have family members who eat gluten free so when they come over try to create things that they will love. This one was a total hit. Ryp’s beautiful mom and I (aka Grandma Helen) mixed up some yummy ingredients and baked these yummy Italian bites with quinoa in a mini muffin tin to create adorable and delicious appetizers.
This is what you will need if you want to make these:
2 Cups Cooked Quinoa, 1/2 Cup Chopped White Onion, 2 Beaten Eggs, 1 Cup Mozerella Cheese, 1 Tablespoon each of Dried Basil, Garlic Powder and Oregano, Cherry Tomatoes and Pizza Sauce for Dipping
We mixed everything but the tomatoes and pizza sauce in a big bowl. Then we filled greased mini muffin pans with the mix, pressing it down to get the mixture compacted. Last, we added cherry tomato pieces to the tops and baked it for 18 minutes at 350 degrees.
Wah-Lah, they were perfectly scrumptious.
