My kids love french fries, the skinny ones that are like over sized shredded hash browns. I decided to get creative in the kitchen and make a french fry casserole and it was delicious enough to share. (Plus is created an awesome batter for the following morning’s breakfast too which I think is cool!)
To make it, I mixed together seven things. Here they are in no particular order: 24 ounces of frozen shoestring french fries I used Ore-Ida), one can of cream of chicken soup, 1/2 stick of melted butter, 1/2 cup of sour cream, 2 cups shredded colby cheese, salt and pepper. I put in a glass baking dish and cooked it at 350 degrees until is was bubbly and browning on top (about 30 minutes).
I served it with ketchup and jalapeno peppers (on the side of course) and it was awesome. There were leftovers so the next morning I mixed a cup of the casserole with a beaten egg and made a french fry casserole pancake. It was really yummy too. I love when one great dish converts to another.
