I spent the day experimenting in the kitchen. It started because I wanted a cookie and there were none to be found…only broken candy canes left over from the parade. I decided to gather the ingredients I found first and create something new.
I made the Betty Crocker brownies as instructed, adding marshmallow halves before baking so they would brown. YUM! Then I started making up a recipe for Peppermint Marshmallow Creme to top them with.
While they were baking I crushed up the candy canes. I used my handy holiday rock to crush them.
Once they were out of the oven and cooled to cut, I cut them in squared and assembled them on a plate and made up the creme recipe to put on top of them.
Here it is…the recipe for Peppermint Marshmallow Crème (Yummy to Serve over brownies, cakes, cookies or as a dip for pretzels)
- 2 egg whites
- 1 1/2 cups sugar
- ¼ cup water
- 8 large marshmallows, quartered
- 10 mini crushed candy canes
Using a double boiler, cook all ingredients but the candy canes about 6-9 minutes or until mixture starts to peak, using a portable electric mixer on the highest speed. Once removed from stovetop, spoon mixture in to larger bowl and add crushed candy canes by stirring them in with a spoon.
And the part I love, cutting off the Box Top for Education and knowing that I can make a tiny difference for the girls’ school.
