I made this super yummy tomato and cheese curd salad. Here is how it happened. Yesterday Ryp and I went to the Farmer’s Market at Southland in Aurora. We were strolling around and buying important things like tomatoes and honey, even a cake pop and then … BOOM… right in front of me was this sign.
I jumped a bit and was pretty excited because I LOVE fresh cheese curds. Their little space in the middle of the parking lot was just really cute and fun and inviting. The vendor was Cream City Market and the greatest thing is…they take orders on their website!
The owners, Mark and Kim Albrecht, have a great story. You can read about them on their website and learn lots about the cheese curd and what makes it so amazing. I love their tagline, “Put a little squeak in your cheek.”
We talked to them for a bit and learned that the cow’s name is Squeaky. They had a cute little way to share this info, worthy of Pinterest in my opinion. We bought a big bag and headed home.
I decided to make a quick salad with the incredibly fresh and juicy tomatoes and the cheese curds. I diced up a HUGE tomato and then poured cheese curds on top. I sprinkled it with a tad of olive oil then lots of black sea salt that we also got at Southland in the spice shop.
I let is sit out on the counter for an hour to marinate a bit before eating. It was really pretty.
It was super yummy too!
