This is the story of how slow cooker cheesy sweet potato soup became our dinner last night. Yesterday, I woke up in the morning and looked at the menu on the refrigerator. I usually plan and have it printed and groceries ready at the start of each weekend. This time around, not so much. I was busy last week. I made a lot of stuff with glue and paint and sugar and such. Anyway, the menu read “Crockpot Surprise”.
Easy enough, right? I looked in the veggie baskets and the freezer for meats and this is what I came up with…2 super large sweet potatoes, 6 red potatoes and a HUGE white onion. I made it work and it was amazing. Here it is… Cheesy Sweet Potato Soup!
- 2 Large Sweet Potatoes Chopped into 1″ squares
- 6 Red Potatoes Cut in Fours
- 1 Large White Onion Chopped
- 1 Can Cream of Mushroom Soup
- 1 Can Cream of Chicken Soup
- 2 Cups Water
Put it all in the slow cooker for 8 hours on medium. Mix it ocassioanlly. The sweet potatoes will get mushy and blend while the others will stay a little denser.
Serve it with shredded cheese and brown sugar on top. It was great with tossed salad.
