I am playing around with foods that make me feel good. I was recently diagnosed with Hashimoto disease which changes everything about what diet will work best with my body. This lemon edamame hummus was pretty delicious. It would work great to serve as an afternoon snack or an evening appetizer.
- 1 c. cooked edamame
- 1/4 c. tahini
- 3 TBSP lemon juice
- 1 garlic clove, peeled
- 3 TBSP. olive oil
- Dash of Salt (Optional)
- Roasted Red Pepper Spread if desired
- Mix all ingredients (EXCEPT OIL) in a food processor until smooth. I used the Ninja. Process mixture until creamed. Add oil 1 TBSP at a time until thoroughly mixed.
- Add a roasted red pepper spread if you like spicy by layering in before serving.
- Serve chilled with fresh veggies and pita chips.
Personally, I love it on the pita chips best!
It just looks healthy. It is so green! Green is good, right?
Next time I am going to try it with fresh squeezed oranges. I know it sounds silly but I LOVE oranges.
