I am a gluten free eater. It is for a lot of reasons that I choose this but the biggest of all is because I feel a gazillion times better without gluten bloating up my body and slowing me down. I whipped up a batch of Krusteaz gluten free brownies yesterday and because I am crazzzzzy about carrots, made them darling.
I used the recipe that comes with the mix but baked the batter in a muffin tin for only 32 minutes.
Once the brownies were totally cool, made holes in the middles with a clay tool. I filled the wholes a little overflowing with orange icing.
Then I added green icing for the carrot tops.

This is my favorite icing recipe for things like this.
- 1 C Room Temperature Butter
- 1 C Vegetable Shortening
- 1 TSP Vanilla Flavoring
- 1 TSP Almond Flavoring
- 3 C Powdered Sugar
- Beat ingredients together until well whipped and creamy. If your frosting is too thick, you can add 1 TBSP of milk. Use food coloring to dye to your desired hue.
